what kind of speaker setting (5.1 7.1) does a commercial cinema use compared to a typical home theater?

7.1 sound in a well designed home theater is better than the best theater sound available.
In your home, you don't have to have a sweet spot a mile wide, and as such, imaging is far superior in your favored seating position.
Movie theaters use many channels and speakers for one simple reason. You have to provide the surround effect for everyone in the audience, and there are a heck of a lot of people in that audience, in a heck of a lot of rows, and a heck of a lot of columns. On top of all that, in order to fill such a large room that is stuffed with so much absorbent material, they need a heck of a lot of power, and at a certain point, you just have to start adding more cone area to distribute the power into the room.
You don't need any of this in your home. As a matter of fact, a 10.2 channel system sounds WORSE in all but the best of dedicated home theaters, and is still only for the largest of those.
Unless you have a separate building or an incredibly large and expensive dedicated, isolated room that is specifically built to be a theater, it is an absolute waste of time and money, and will only make things worse.
There is such a thing as too much of a good thing. 7.1 is too much for many rooms at or near reference volume level. Not only are the rooms just too small for proper placement, they are commonly ill designed for acoustic performance in the first place.
It takes a lot of work to make 7.1 sound right. In many cases, 5.1 is going to be better in the average room that such things are found in.
You can safely toss the idea of ever having anything more than 7.1. It provides NO tangible benefit unless you are dealing with a space that is seriously huge, and incredibly well designed.
